Bilderberg Bliss: The recipe from Steve's Mum Breadpudding

From the kitchen table in England to Bilderberg's sustainable breakfast

They sit together at the kitchen table, a steaming pot of English tea between them, while the delightful aroma of homemade bread pudding slowly spreads through the kitchen. For Bilderberg Chef Steve Sykes, these are precious childhood memories. His love for cooking began in his parents' kitchen in England. "My mother and I often stood together in the kitchen preparing traditional English dishes," he says with a smile.

Sustainable Breakfast

During the renewal and sustainability efforts of the Bilderberg breakfast buffet, Steve rediscovered the family recipe. "Reducing food waste has long been a priority in our kitchens. Bread often remains leftover during breakfast, and Bread Pudding is the perfect dish to utilize this. It's truly the foundation. Of course, whipped cream and custard complete the recipe," Steve adds with a smile.

Our fight against food waste

In 2023, Bilderberg revamped its breakfast buffet, meticulously screening 125 breakfast items and replacing them with more sustainable choices where necessary. To further reduce food waste, we enlisted the help of Orbisk, a smart food meter that weighs and categorizes discarded food. What did we find? Bread was the most wasted product at breakfast. Instead of reducing the bread offering, chef Steve came up with the idea of introducing the nostalgic Bread Pudding as a valuable addition to the assortment. Thanks to his creativity, all Bilderberg chefs now use his recipe, resulting in almost zero food waste of bread. 

Back in the Kitchen Together

"Meanwhile, Bread Pudding has become an integral part of the Bilderberg Breakfast Buffet. Something Steve's mother, who originally passed on the recipe, wanted to see for herself. They dove back into the kitchen together, this time at Steve's place, at Hotel De Keizerskroon in Apeldoorn. Her conclusion? The Bread Pudding tastes just as good as at home!

The recipe

of Steve's Mum Breadpudding

Preparation Time

Kitchen essentials

Baking pan 28 cm

Ingredients: 
400 grams stale bread
135 ml heavy cream
570 ml whole milk
2 Medium eggs
3 Medium egg yolks
20 grams Bourbon Vanilla Sugar
70 grams granulated sugar
80 grams golden raisins (soaked)
20 grams custard powder
Juice of 0.5 Lemon
Powdered sugar for garnish

Topping: 
90 grams sliced almonds
60 grams granulated sugar
15 ml egg white

“Also, add pieces of chocolate to the batter; that's delicious too!”

Instructions: 

1. Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit).
2. Cut the leftover bread into coarse pieces and place them in a large bowl. Mix in the raisins.
3. Then, add the heavy cream and whole milk, and stir.
4. In a separate bowl, whisk together the eggs, egg yolks, vanilla sugar, granulated sugar, custard, and lemon juice until slightly fluffy. Add to the bread mixture and mix well.
5. Spread the mixture evenly into the baking pan.
6. Next, gently mix the ingredients for the topping together and sprinkle it over the pudding.
7. Bake the bread pudding for 45 minutes.
“Serve the Bread Pudding lukewarm and sprinkle with powdered sugar. Enjoy your meal!”

"Personally, I find currant bread and white bread the tastiest in a bread pudding. The Bread Pudding is also suitable for freezing. Enjoy it within 2 months, but with this delicious recipe, that shouldn't be a problem!"
